Primarily known for it’s use as a salad crop Chicory can also be used as a border perennial. Cichorium intybus forms a clump and has quite long, thistle-like, jagged basal leaves. During summer sky-blue flowers are produced on tall flower spikes. The flowers are daisy-like and are produced during mid-summer to early autumn. Unusually, they only open in the morning, closing up by lunchtime.
